Healthy Cookies (Exclamation Mark!)

Sunday was coooold (I ran for a total of 11 minutes before I was convinced my face was going to become a victim of frostbite!) and snowy… the perfect type of afternoon for baking. I found these cookies on Heidi Swanson’s wonderful site, 101 Cookbooks, and decided to go vegan-style.
These use bananas, almond meal, oats, and coconut oil for the base—no eggs, butter, flour, or vegetable oil. I ground blanched almonds with an immersion blender (no food processor in this small kitchen!), but they were still pretty big bits. Didn’t seem to be a problem at all. The cookies that baked the longest (15-16 minutes) also held together the best.

These are moist, slightly sweet, and just virtuous enough that you can have another one… or two. Tammy and I devoured the first batch out of the oven (it was cold! snowy! Sunday afternoon!).

The rest are now bundled up and on their way to my boyfriend, Lorne. He was in a tiny car accident and is hanging out at home in Idaho until he’s better… so the plan is for the healthy cookies to make everything better.
